RECIPE
Prep time: 25 minutes
Cook Time: 45- 50 minutes
Serves: 4-5 servings
Ingredients:
· 5 large boiled potatoes
· 1 cup chopped green onion
· 6-7 sliced garlic
· 4 tablespoon mustard
· 100 grams butter
· 2 teaspoon pepper
· 1/2 cup parmesan cheese
Method:
1. Add butter to the pot, heat on medium until it melts
2. Fry garlic for 30 seconds and add the chopped onions to it
3. Sauté on medium flame for 2-3 minutes
4. Add pepper and sauté
5. Once fragrant, add mustard and sauté
6. To the pot add boiled potatoes and cook on low to medium heat for 10 minutes
7. Add cheese and mix well until the cheese melts
8. Cover and cook for 5-7 minutes
9. Add 1 cup water, cover and cook for 10 minutes, keep stirring at regular intervals
10. Now on low heat mash the potatoes with a masher
11. Add water as per desired consistency. Cover and cook for 5 more minutes
12. Potato soup is usually very thick, you may add water at this stage and adjust seasoning but I would not recommend it
13. Serve piping hot with toasted garlic bread
