The festive season of Navratri is here, and it is time for both revelry and fasting. Navratri fasting rules vary from community to community; the basic premise is that the food should be healthy and light.

INGREDIENTS:
For the chutney:
l 2 cups Water
l 1 Cup Sugar
l 4 tbsp Amchur Powder
l 1 tbsp Jeera Powder
l 1 tbsp Kashmiri Red Chilli Powder
l 1 tbsp Red Chilli Flakes
l Rock Salt, as per taste
For the potatoes:
l 5 Potatoes, diced
l Oil For Frying
l Jeera Powder
l Red Chili Powder
l Rock Salt
l Lemon Juice
l Curd (beaten)
METHOD
l Heat water in a pan, once hot add sugar and dissolve.
l Once the sugar has dissolved add amchur, jeera powder, red chilli powder, chilli flakes and rock salt.
l Cook on medium flame, till it reduces to desired consistency and keep aside.
l Now fry the potatoes till golden and crispy. Keep aside.
l To assemble the chat, add the potatoes to a bowl.
l Top the potatoes generously with chutney.
l Now add the beaten curd, and add some more chutney on top.
l Sprinkle some chaat masala, chilli powder and rock salt.
l Garnish with fresh coriander
l The chaat is now ready!
