This tea-cake is a tropical vacation on a plate, these are classic flavours we have grown up with. This recipe calls for an all-in-one method bake, and is an easy showstopper. The cake has a toasted coconut crumb and tart caramelised mango slices.
INGREDIENTS
· 1 ¼ cup flour
· ¾ cup sugar
· ½ cup oil
· 1 cup coconut yoghurt or plain yoghurt
· ½ teaspoon Vanilla essence
· 2 teaspoon baking powder
· 2 teaspoon baking soda
· ½ cup desiccated coconut, toasted
· 3 mangoes, thinly sliced
METHOD
1. In a mixing bowl, add all the ingredients except desiccated coconut and mangoes.
2. Mix well until it forms a smooth batter.
3. Make sure you do not over mix the batter.
4. Now line and grease a cake pan and evenly spread desiccated coconut to cover the bottom.
5. Place the mango slices as shown in the video
6. Gently pour the cake batter into the pan.
7. Bake at 180 degrees in a preheated oven for 45 minutes.
8. Let the cake cool for about 15-20 minutes before you remove it from the pan.
9. The cake will be crumbly so make sure to cut it once it reaches room temperature.
