I’ve used this simple and easy-to-make eggless mayonnaise recipe more times than I can count. If you’ve never tried homemade mayonnaise, then you are in for a treat. This homemade mayo is creamier, tastier and so much more flavourful than anything you can buy at the store. Make three flavours – classic, tandoori or mixed herbs, or all three just under 10 minutes!
Ingredients:
For classic mayonnaise:
1. ½ cup fresh cream (chilled)
2. 2 tablespoons condensed milk
3. ¾ cup oil
4. ½ teaspoon mustard powder
5. ½ teaspoon salt
6. 1 tablespoon vinegar
For tandoori mayo:
1. 1 teaspoon chilli powder
2. ¼ teaspoon turmeric
3. ¼ teaspoon coriander powder
4. ¼ teaspoon cumin powder
5. ¼ teaspoon garam masala
6. ¼ teaspoon ginger garlic paste
For mint & coriander mayo:
1. 3 tablespoons coriander leaves
2. 3 tablespoons mint leaves
3. 2-3 green chillies, chopped
Method:
For classic mayonnaise:
· In a bowl or container add all the ingredients under classic mayonnaise except vinegar.
· Blend till the mixture thickens.
· Now add the vinegar and pulse for another minute.
· The mixture will have thickened even further.
· You may add more oil and vinegar to reach the desired consistency.
· You eggless classic mayonnaise is ready to enjoy.
For tandoori mayo
· Use the above recipe as the base.
· To your homemade classic mayo add the spices mentioned in the ingredient list.
· Blend to smooth paste.
· Your tandoori mayo is ready.
· If the paste is too thick add a slash of water and blend.
For mint & coriander mayo:
· To your homemade classic mayo add coriander, mint, and chilli.
· Blend to smooth paste.
· Your mixed herbs mayonnaise is ready to serve.
