While some dessert trends come and go, my favourite remains the lemon soda or widely known as the 7-Up Bundt cake. I have baked this cake on various occasions, even at fancy dinner parties and every time people ask what’s the secret to that extra-light texture with just the slightest hint of citrus.

Servings: 10-12
Cake:
· 1 ½ to 2 cups granulated sugar
· 1 ½ cups butter, softened
· 5 eggs
· 3 cups all-purpose flour, sifted
· 2 tablespoons lemon juice
· 1 teaspoon vanilla extract
· 1 cup lemon-lime carbonated beverage
Glaze:
· 1 cup sifted confectioners' sugar
· ¼ cup milk
· ½ teaspoon vanilla extract
Method
1. Preheat oven to 180 degrees.
2. Generously grease and flour a tube pan
3. To make the glaze, whisk together sugar, milk, and vanilla extract until glaze is smooth and keep aside.
4. Beat white sugar and butter together in a bowl using an electric mixer until creamy and pale
5. Add eggs, one at a time, mixing well after each addition.
6. Add in flour alternately with the soda, blending well after each addition until batter is well combined. Do not overmix the mixture
7. Stir in lemon juice and vanilla extract.
8. Pour into the prepared pan.
9. Bake in the preheated oven for 60-65 minutes or until a toothpick inserted in the center of the cake comes out clean.
10. Cool in pan for 20 minutes
11. Remove from pan and bring it down to room temperature
12. Drizzle with the glaze and serve.
