This Indian dessert is a delicious combination of carrot, milk and sugar slow cooked in desi ghee that adds to the aroma and flavour. An easy recipe that requires some patience, lots of love and care. For this recipe you can use any carrots – red, orange or black; just make sure they are fresh and not stringy.
RECIPE
Prep time: 15 minutes
Cook Time: 60 to70 minutes
Serves: 4
Ingredients:
- 1 kg grated carrot
- ¾ cup sugar
- 300 ml milk
- ½ cup chopped cashew or assorted dry fruits of your choice
- 3-4 tbsp ghee
Method:
- Heat pan on medium flame and add ghee.
- Once the ghee has melted, add in the grated carrot, and cook it for 10 to 25 minutes, stirring in between.
- After 25 minutes, increase the flame to high and cook it for another five to seven minutes, stirring continuously.
- Reduce the heat to medium and add milk.
- Mix well and cover the pan.
- Cook for 20 minutes on low flame, keep stirring in between.
- Add sugar, chopped dry fruits, and mix.
- Cover the pan and cook for a further 10 to 15 minutes on low flame, stirring occasionally.
- Increase the flame to medium, and cook it for two to three minutes, stirring continuously.
- Turn off the flame, transfer to a serving plate, and garnish with some cashew nuts.
- Your Gajar ka Halwa is ready to serve.
