Tortilla, and cheese are always stocked up in my refrigerator and come in handy when we are craving quesadillas which happens quite often. And we always have leftover vegetables in the fridge. This easy and delicious quesadilla is a great way to use up any leftover veggies. in this recipe I have used spinach and corn.
INGREDIENTS:
- Leftover Spinach
- Leftover Boiled corn
- 2 tablespoons butter
- Cream cheese
- Grated cheese
- Quesadilla wraps
METHOD:
- Heat 2 tablespoons butter in a pan
- Sauté the leftover spinach in butter till it loses its moisture.
- Add the cooked spinach to the boiled corn.
- To this add cream cheese, and mix till combined.
- In a skillet, heat the quesadilla
- To one side add the spinach mixture
- On the other side add grated cheese
- Fold and flip the quesadilla
- Once the outsides are golden brown, cut it in half and serve hot!
