When you are staring at fridge full of vegetables nut want a quick and simple meal then vegetable stir-fry noodles is the dish for you. Honestly, WHO EVEN KNEW how easy it could be to make stir-fry noodles at home? 20 minute stir-fry noodles! Made with just Szechuan, sesame oil, ramen noodles, and any veggies or protein you like. So yummy!
Ingredients:
- 1 packet store-bought Hakka Noodles
- 1 1/2 tablespoons sesame oil / vegetable oil
- 1 cup mushrooms
- 1/2 cup cauliflower cut into tiny florets
- 1/2 cup green capsicum, thinly sliced
- 5-6 garlic cloves, finely chopped
- 2 tablespoons Szechuan sauce
- 1 tablespoons hot and sour ketchup
- 1/2 tablespoon pepper, freshly ground
- Salt to taste
Method:
- Cook or boil the Hakka noodles as per instructions given on the packet and keep aside.
- To a wok, add sesame oil and sauté garlic over medium high heat.
- Once fragrant, fry the florets and mushrooms.
- Now season with salt and pepper.
- Once the vegetables are almost cooked, add both the sauces and mix well.
- Sauté for another 2-3 minutes and add in the cooked noodles.
- Give it a quick mix so that the noodles is nicely coated with all that sauce.
- Lastly add the capsicum, cook for a few minutes on medium to high flame.
- Your stir-fry noodles are now ready.
