RECIPE

Makes: 4-5 servings
Roasted Garlic Broccoli & Mushrooms
Ingredients:
· 250 gms fresh broccoli
· 2 packets button mushrooms
· 2 Tablespoons olive oil
· 1 teaspoon minced garlic
· salt and pepper, to taste
Method:
1. Preheat the oven to 200C
2. Line a baking sheet with parchment paper
3. Rinse and chop the broccoli into bite-sized pieces; place them on the lined baking sheet.
4. Clean and place the mushrooms in the baking tray
5. Drizzle with olive oil, and sprinkle on minced garlic, salt and pepper
6. Toss roughly with hands to evenly coat everything.
7. Roast in the oven for 15 minutes or till completely tender
8. Taste, and season with additional salt and pepper (optional)
Mac and Cheese
Ingredients:
· 3 tablespoons butter
· 1 tablespoons flour
· 1 ½ cups water
· 2 cups milk
· 500 gms uncooked elbow pasta
· ½ teaspoon Kosher salt
· ½ teaspoon finely chopped/grated garlic
· 1/4 teaspoon mustard
· 3 cups freshly shredded/diced mozzarella and cheddar (mixed)
· 1/2 cup freshly-shredded parmesan (any processed cheese would do as well)
Method:
1. Melt butter over medium-high heat.
2. Add flour and garlic, cook for a minute, stirring continuously until combined.
3. Pour in ½ cup of twater, whisk until the mixture is completely smooth and begins to thicken.
4. Add the remaining water and milk, mix continuously until combined.
5. Add in pasta, salt, and mustard. Reduce heat to medium-low
6. Cook for 9-10 mins, be careful not to overcook the pasta
7. Remove from heat, and stir in the cheeses until melted.
8. Taste, and season with additional salt and pepper (optional)
9. Serve hot with the roasted veges
