Sweet and spicy Masala Corn Fritters make for a great appetizer or snack on a rainy day! Sweet corn mixed with herbs and spices, fried into a rice and chickpea flour dry batter. These flavors are absolutely delicious!
While you still get the sweetness from the corn, you get a kick of spice from the chillies and kashmiri powder. Each bite is also packed with flavour - a perfect blend of seasonings including garam masala, curry leaves, cumin, and turmeric.
INGREDIENTS:
* 1½ cups sweet corn (boiled if using fresh corn)
* 1 teaspoon ginger garlic paste
* 1 teaspoon cumin seeds
* 3 tablespoons gram flour
* 3 tablespoons rice flour
* 1 teaspoon garam masala
* 1 onion , thinly sliced
* 3 green chilies
* 3 sprigs curry leaves
* ½ teaspoon Salt
* 1 teaspoon turmeric
* 1 teaspoon red chili powder
* Oil for frying
INSTRUCTIONS
* Pulse corn kernels coarsely in a mixer
* Transfer to a mixing bowl along with the rest of the dry ingredients and mix.
* Adjust salt as needed.
* Heat oil on medium in a deep pan for frying.
* Once the oil is hot enough, drop small portions of the mixture into the oil. (The dough should sizzle and rise without browning quickly)
* Do not disturb them for a few minutes.
* Fry until golden, stirring often.
* Remove excess oil and transfer onto a dish.
* Serve with choice of Chutney and chai!
