Fried Rice full of healthy veggies that can be made in under 30 minutes. What I love about this recipe is how you can take the basic idea and add whatever veggies you have in the fridge and incorporate them.
· 2 tablespoons sesame oil
. 5 garlic cloves, large, finely chopped
· 1 inch ginger, finely chopped
· ½ cup roughly chopped onions + ½ cup for garnishing at the end
½ cup spring onion greens, chopped
· ¾ cup finely chopped carrots
· ½ cup chopped French beans
· 3 tablespoons soy sauce
· 1 tablespoon vinegar
· 2 cups cooked rice
· ½ tablespoon freshly ground pepper
· Salt to taste
Method:
· In a wok, heat oil
· Fry garlic and ginger for 2-3 minute on medium flame
· Once fragrant, add red and green onions and fry for 3-4 minutes
· Add carrots, beans and sauté
· Once they are half cooked, add soy sauce and vinegar
· Sauté for another 5-7 minutes
· Add in the cooked rice and mix well
· Sprinkle salt and pepper
· Fry on high heat for 2-3 minutes
· Garnish with green onions
· Your fried rice is ready to serve!
