Cookie season is in full swing, and we can't wait to get baking! These Glass Window Christmas Cookies come together in a flash and bring in the holiday cheer along! Have fun with various combinations of cookie cutters and go crazy with your favourite hard candy.
PRO TIP: Make sure you wait for the cookies to cool before lifting them off the baking sheet, they need to set and firm up.
Makes: 18 – 20 cookies
INGREDIENTS:
• 1 cup/ 200 grams salted butter, room temperature
• 1 cup/ 200 grams granulated sugar
• 2 eggs
• 4 cups/ 500 grams all-purpose flour, sifted
• ½ cup/ 100 grams Cornflour
• 1 teaspoon vanilla extract
• ½ cup hard candies
METHOD:
• Using an electric hand mixer, cream butter and sugar together.
• Add eggs while mixing on low.
• Scrape the bowl down at intervals.
• Now add in the vanilla and mix.
• Fold in the dry ingredients.
• Knead into a soft dough.
• Separate dough into two disks.
• Cling wrap and chill for about an hour.
• Place the chilled dough on to a baking sheet.
• Roll chilled dough till it reaches ¼th inch thickness.
• Cut out a shape using a medium to large cookie cutter.
• Cut out the window shape on the inside using a smaller shape.
• Remove excess dough as shown in the video.
• Place cookies on a baking tray.
• Now chill the shaped dough for another 10 minutes
• While the shaped cookie chills, add hard candies to a ziplock bag.
• Crush them up.
• Then add to the inside of the cookies.
• Distribute evenly and make sure you do not get any hard candy on the cookie dough.
• Bake for 12 minutes in a preheated oven to 180C.
• Allow to cool on baking sheet till the cookies reach room temperature before lifting them from the sheet.
• Enjoy fresh or save them in an airtight cookie jar for Christmas morning.
