Lemon pepper is one of my favourite flavour combinations. So naturally, I realised, I needed to experiment with my favourite vegetable and my favourite flavour combo. These cauliflower bites give out a buttery-zingy heat that will leave you wanting more. The batter is light and fluffy with a slightly crispy crunch to it. These lemon pepper cauliflower wings are a gorgeous golden; but more importantly, a treat to your palette.
INGREDIENTS:
1. 1 medium head cauliflower, if using a large head, double the batter and sauce quantities
2. ¾ cup all-purpose flour
3. ¾ cup milk
4. 1 tablespoon pepper seasoning
5. 1 tablespoon mustard powder
6. 1 cup crispy breadcrumbs, seasoned with salt & pepper
7. 8 ½ tablespoons lemon juice
8. 4 ½ tablespoons butter
9. Oil for frying
10. Salt and Pepper for garnishing
METHOD:
Prepare Cauliflower
Removing leafs from stem of cauliflower. With a sharp knife cut around the middle of the cauliflower to remove core. Pull florets apart. Rinse cauliflower and set aside
Preparing Battering Station
· In a bowl mix flour, pepper, salt and mustard powder.
· In a separate bowl add bread crumbs, seasoned with salt & pepper.
· In another bowl add milk
· In a medium frying pot, pour in 1 and 1/2 cups of oil.
· Heat oil on medium heat setting.
· Begin preparing wings by evenly coating the cauliflower florets
Frying
· Add breaded cauliflower to hot oil, careful not to crowd. (We recommend testing one piece of cauliflower to ensure oil is hot enough. To also ensure pieces are not to big, if they are you’re cauliflower will still be extra firm and tough to get a toothpick through)
· Cook florets until golden brown (approximately 10 - 12 minutes)
· Set on paper towels to drain excess oil
Garnishing
· Mix, butter, lemon juice, salt and pepper
· Pour this mixture over the fried florets and give it a quick mix
